1 QT Eden Soy Milk
4 TBS Lemon Juice
Mix together and put in a 4 QT saucepan. Cook on medium heat until it comes to a boil. And curds separate from the whey. It will foam up when it’s ready. Pour into a colander lined with cheese cloth. Let drain for about an hour. Gently squeeze the liquid from the cloth. Mix the curd with the following ingredients:
1 TSP Salt
2 TSP Garlic Powder
2 TSP Basil
½ TSP Thyme
1 TSP Parsley
¼ - ½ Cup Soy Mayonnaise


  1. Put on a plate and shape into a ball. Cover with dried parsley. If you desire a creamier cheez you can put the curd and mayonnaise in a blender and process until creamy, then add the spices and herbs.
